万圣节:手把手教你做南瓜饼

万圣节是西方孩子最喜欢的节日,南瓜饼是万圣节必不可少的传统食物,看上去复杂,其实做起来很简单,你也可以学习后在家中尝试一下。

Step 1: You will need
850 g pumpkin, chopped
350 ml cream
190 g brown sugar
Half tsp salt
3 eggs and 1 egg yolk
1 tsp cinnamon
quarter tsp nutmeg
quarter tsp allspice
the zest of 1 lemon
1 short-crust pastry base , ready made
1 roasting tin
1 spoon
1 fork
1 pie mold
1 jug
1 hand blender
aluminium foil
parchment paper
about 500g of beans to weigh down the crust
步骤一:你需要
850克切好的南瓜
350毫升奶油
190克红糖
半茶匙盐
3个鸡蛋和一个蛋黄
1茶匙肉桂粉
1/4茶匙肉豆蔻粉
1/4茶匙多香果粉
1个柠檬皮
1个做好的酥皮底
烤盘
勺子
叉子
做饼的模具
杯子
手动搅拌器
铝箔
羊皮纸
500克左右的豆子用于压饼皮

Step 2: Preheat the oven
Set the temperature to 180oC or gas mark 4.
步骤二:烤箱预热
把温度调到180度,或者燃气温度刻度调到4。

Step 3: Roast the pumpkin
Tip the chopped pumpkin into the roasting tin and cover it tightly with aluminium foil. Put the tin on a low shelf in the oven and bake for about 30 minutes (this is the first stage of creating the pumpkin puree).
步骤三:烤南瓜
把切好的南瓜倒入烤盘,用铝箔将其盖好,将边缘压紧。将烤盘放入烤箱的低层,烘烤30分钟(这是制作南瓜泥的第一步)。

Step 4: Prepare the pastry base
Gently lay the pastry crust on the pie mold and carefully press it down to form the shape of the pie. Remove any excess pastry from the edges. Now using a fork, lightly jab the bottom of the base various times. This will prevent the pastry from rising.
Put the parchment paper over the top of the pastry and pour the beans on top to weigh it down.
步骤四:准备饼的底座
轻轻地将酥皮外壳放在做饼的模具中,仔细地把它压成饼的形状。将边缘多余的酥皮去除。用叉子多次轻轻按压底部。这样可以防止饼皮起来。把羊皮纸放在饼皮上,然后将豆子倒进去压一压。

Step 5: Bake the pastry
Place the pie mold in the oven with the pumpkin and bake for 20 minutes.
步骤五:烘烤饼皮
把模具放入装有南瓜的烤箱,烘烤20分钟。

Step 6: Remove from the oven
When the pastry crust is golden brown, take it out of the oven. Test the pumpkin to see if it's done by piercing it with a fork. It needs to be completely soft to make the puree. Remove it from the oven and discard the foil. Take the beans off the pastry and leave it and the pumpkin to cool.
Finally, raise the temperature of the oven to 210 degrees centigrade or gas mark 6.
步骤六:从烤箱中取出
当外壳烤成金黄色,从烤箱中取出。用叉子戳戳南瓜看看是不是做好了。南瓜需要非常软才能做成南瓜泥。从烤箱中拿出,去掉铝箔。把饼皮上的豆子拿掉,等待饼皮和南瓜冷却。

Step 7: Make the pumpkin puree
Spoon the cooked pumpkin into the jug and using the hand blender, blend into a puree.
步骤七:制作南瓜泥
用勺子将南瓜塞进杯子里,使用手动搅拌器搅拌成南瓜泥。

Step 8: Prepare the pie filling
In a large bowl mix the brown sugar, cinnamon, nutmeg, allspice, lemon zest and salt. Now, whisk the eggs, add them to the other ingredients and stir. Pour in the pumpkin puree and cream and stir well.
步骤八:准备饼馅
把红糖、肉桂、肉豆蔻、多香果粉、柠檬皮和盐混合放入大碗中。把鸡蛋打散,加入其它配料,然后搅拌。放入南瓜泥和奶油后充分搅拌。

Step 9: Bake
Pour the filling into the pastry crust, almost to the top. Carefully place it into the centre of the oven and bake for 15 minutes. Lower the temperature to 160oC and bake for a further 35 minutes.
步骤九:烘烤
把馅料放入饼皮中,差不多填满整个饼皮。慢慢放入烤箱中间,然后烘烤15分钟。将温度降到160度,继续烘烤35分钟。

Step 10: Remove from the oven
When the pie is fully cooked remove it from the oven and allow it to cool and set.
步骤十:从烤箱中拿出
南瓜饼熟了后,从烤箱中取出,然后等待其冷却和定型。

Step 11: Serve
The pie can be eaten warm or cold and served dusted with icing sugar and with a dollop of whipped cream.
步骤十一:上桌
南瓜饼可以趁热吃,也可以凉了以后吃,可以撒上糖粉吃,也可以和奶油一起吃。
